BRUCE’S RECIPES

haddock

Haddock Balfouri

Ingredients per serving: 

Angel hair pasta enough for one serving

.50 lb. of Haddock

1 Lemon

Olive oil or 1/4 stick butter

1tsp. crushed garlic or more

half cup white wine

Tomato

Cilantro to sprinkle on top

In baking pan I top haddock with Mozzarella and diced tomatoes then bake for 15-20 minutes at 350 degrees. Then broil for a few minutes at the end to brown the cheese just a bit. While cooking haddock you can be boiling water add angel hair and cook as instructed on box. While that’s all happening, I make up a lemon garlic sauce in a frying pan. Quarter stick of butter or more and some olive oil in pan. I just pour it in. Probably 2 -3oz. or so. Ad Lots of crushed garlic and cook for a bit then add half cup of white wine and squeeze in juice from 1 lemon. When pasta is done strain and plate the pasta. Then top with haddock. Spoon the wine, lemon, butter, garlic sauce all over top. May sprinkle a little chopped cilantro or parsley on top as well. Don’t skimp on the tomatoes and garlic, and you may like more or less lemon . Serve with garlic bread. ENJOY………Let me know how you like it.

Nanas Haddock Chowda  

2 lb Haddock                               Ground Pepper (to taste)
4 Bacon strips                              Salt (pinch)
1 Onion diced                              Half & Half 16 oz. +-
2 med. size cubed potatoes     Butter (1/4 -1/2 stick)

Cook bacon til crispy in pan, remove bacon strips, leave most of fat. Throw diced onion in pan, cook til tender. Add 1.5 cups +– H2O bring to boil. Add small cubed potatoes skins on, cover, cook til slightly tender test with fork. May need to add a bit more H20 if water boils away. Then take and lay full pieces haddock right on top, cover, steam til done (approx. 5 min.) or fish pulls apart with a fork. Reduce heat, add half & half, butter, pepper, salt. Crush up bacon strips, add on top. Stir gently trying not to break up to much.  Serve with rolls or corn bread.

NOTE: May want to add more or less half & half. Sometimes I’ll add a tub of crabmeat and a dollop of sour cream. Do not boil after cream added. Enjoy any time of the year.

Nanas Chowder crabby

Crabby Croissant Sandwich

Makes enough for 2 Croissants:

1-2 tubs crabmeat

2 Croissants

1 Tomato

6 slices Swiss cheese

Mayonnaise

Take 1 tub of crab and mix in bowl with mayo to your liking. I like lots of crab so I might mix up 2 tubs and use say 1.5 tubs for 2 sandwiches..

Slice croissants and put bottoms on cookie sheet. Add I slice Swiss cheese on croissant. I do this so bottom croissant doesn’t get soggy after adding crab.  Top with a good portion of mixed crab. Then add tomato slices. Another slice of Swiss on top of tomato. Top with the other half of croissant. One more slice of cheese on top.

Put in 350-degree oven for approx. 10 minutes or until you see cheese melted.

Plate with a side of slaw and go at it with a fork and knife.

Blue cheese crumble steak salad

Ingredients:

Steak : Tips, Ribeye, Strip steak

Romaine lettuce

Olive oil

Red onion

Tomato

Blue cheese crumbles

Grill the steak to your liking. As the steak is almost done slice a head of Romaine down the middle. Brush the cut side with some olive oil and place on the grill for a minute or two. Remove and put on plate with grilled side up.  Sprinkle with diced red onions and cut up tomatoes. Top with cut up steak then sprinkle with crumbled blue cheese.

I used macaroni cheese balls for a side from Trader Joes. Mac and cheese as a side would be good as well.

Bruce’s Fried Rice

Ingredients

2 eggs beaten

1 teaspoon Soy sauce

1 teaspoon sesame oil

1 minced clove garlic

1 teaspoon cooking oil

1 stalk celery chopped ½ cup

¾ cup fresh mushrooms sliced

2 cups cooked white rice

¾ cup matchstick carrots chopped

½ cup frozen peas

¾ cup chopped broccoli

¼ cup green onions sliced/chopped

Directions

In small bowl combine eggs a 1 teaspoon soy sauce. Set aside.

  1. In a Wok or large skillet heat 1 or 2 teaspoon sesame oil medium heat. Add garlic and egg mixture to scramble. When cooked remove egg mixture and set aside.
  2. Pour 1 tablespoon cooking oil in Wok. Medium high heat. Stir fry celery in oil for a minute. Add mushrooms. Stir fry for a minute or two.
  3. Add rice, brocolli, carrots and peas. Add 2 tablespoons soy sauce. Cook and stir for 4 to 6 minutes. Add cooked egg mixture and green onions. Stir and heat until heated through.

Note: Add shrimp, Chinese pork, or chicken if you want.

Holly’s Haddock

Ingredients for Holly’s Haddock:

  • 2 piece’s of Haddock Fillets
  • 2 large tomatoes
  • Sour Cream
  • 4 slices American cheese
  • 1/2 stick butter
  • 1 sleeve Ritz crackers

Lay haddock in baking dish. Spread a layer of sour cream on haddock. Then layer with sliced tomatoes. Next layer will be slices of American cheese. Then take a sleeve of Ritz crackers crush up in a bowl. Add a couple tablespoons or so of melted butter, mix up and spread Ritz on top. Bake at 350 degrees for approx.  20 minutes . Enjoy with a side of your favorite rice.

Open faced pastrami sandwich

Open Faced Pastrami Sandwich

Ingredients

1 LB red pastrami. Will make 3 or 4 open faced sandwiches. I do 3 for I prefer more pastrami.

Red onion.

Swiss cheese.

Tomato.

Pumpernickel or rye bread

Poppy seed dressing.

Heat up Pastrami in fry pan.

Sautee sliced red onion in separate pan

Toast the bread of choice

Layer as follows: Toasted slice of bread. Swiss cheese on bread so not to get soggy . Then good amount of the fried heated pastrami. Poppyseed dressing to your taste. Sliced tomatoes. Sauteed onions. Swiss cheese. Once layered up put under boiler until cheese is melted. Remove and eat with a fork and knife.
